i think it wont because birds often fly a lot that they don't know where they are going

Did you catch her from the wild? Actually I think she will be ok, anyway. Greece is warm. I've heard of parrots born in captivity that are doing just fine on their own in Germany and the UK, so a sparrow should be fine.
